When you go into a bike store to purchase a new bike, you'll find that there's no need to settle for everything that comes on the bike. It's called "fitting the bike," and the bike shop guys will mix and match various components to give you the best ride possible, depending on your specifications.
The Saddle
You'll be spending a great deal of time on that saddle, so its important that it fits you well. As with any other bike component, you can get saddles for any budget, and for any need. You can get gel-filled saddles, saddles with cutouts, wide saddles and narrow ones. Women in particular need to get a saddle that fits, as their "sit bones" are spread wider apart than those of a man.
Stems
It's important that the handlebars be set at the proper height, so that the rider does not have to stretch too far forward. Handlebars are fastened onto the stem, so its quite easy to substitute a longer - or shorter - stem, in order to ensure the correct fit. Saddles, tires and brakes will cost more depending on the type you get, but the stem will be swapped out for free.
Tires
Bike tires come in different widths. Very narrow, for rode cyclists, not quite so narrow, for a cross country bike, and very fat, for the dedicated mountain biker. In addition, the treads on these tires are very important. You might want to switch out your tires depending on the terrain over which you'll be riding.
If you're going to be riding on loose dirt or mud, you'll want a widely-spaced, knobby tread pattern. This allows the tire to shed mud. If you'll be on a hard-packed, dry trail, you'll want a tire with a shallow center tread. If you don't expect to ride off-road at all, but still like those fat tires, get them without knobs, which will give you a smoother ride.
Brakes
There are three types of brakes - cantilever, direct pull, and the most expensive, disc. Cantilever brakes used to be the standard, but nowadays any bike that cost over $300 will have "direct pull" brakes. These offer better stopping power. Hydraulic disc brakes are the best brakes of all - as they aren't affected by the wet, but currently they are used only on those bikes used strictly for downhill. They way more than the other types and are much more expensive.
Shifters
There are two kinds of shifters - the twist shifters and trigger shifters. Some people complain that using the twist shifter tires out their hands by the end of the ride.
Pedals - Clipped or Clipless
Important for off-road bikers, as it prevents your feet from losing contact with the pedals during rough stretches. It's easier to get your feet out of toe clips than clipless pedals - which use cleats.
Once you've got your bike fitted out to your satisfaction, you'll be ready to hit the trails and have some fun!

Regular bikes compared to mountain bikes may have a smoother ride and are slower and heavier but are great for riding on the street. You can find information about mountain biking online or in magazines; they are geared toward beginners or professionals. Mountain biking is not really thought of as exercising but it is a great way to burn many calories.
If your interested are off-road you will need bike that can handle the terrain so you will need some big treads and a good suspension to handle the bumps and holes so get a good mountain bike, if you are just riding for fun then a regular bike will do. There are so many different styles of mountain bikes so when you are looking to purchase one make sure it fits the terrain you will be taking it on and make sure it fits your riding style. If you are going to be rough on your bike and plan on going through gravel, dirt and jumping off hills you definitely need a mountain bike.
The chassis on a mountain bike is sometimes referred to as the skeleton, this is a term that refers to the fork, frame and suspension and is looked at as one unit. Mountain bikes are equipped with knobby tires, large number of gears and handle bars that are wider; they also include shocks and a much stronger suspension. You can choose from many different suspensions on your bike, make sure the suspension you choose is going to fit the type of cycling you intend for it. These used to be the most common kind of mountain bike but they are rapidly being replaced by the more comfortable models which feature some sort of suspension system. They have had front suspension on bikes for a while now; the rear suspensions have just come into the market place, it took longer because of all of the design complexities.
Of course, there are many other things to consider when purchasing a mountain bike, but for the beginner, it's best to just narrow it down to how much you want to spend and what kind of suspension you're going to want.
If you want to ride your mountain bikes look for trails that are suited for mountain bikes. If you don't have any trails or jumps, you can build them.
When you first try the toe clip style of pedal you might want to spend some time getting use to it, it will take some practice. Getting a feel for your pedals while first sitting on your bike, keep one foot on the ground and practice moving your foot away from the pedal.
If you have clip less foot pedals or toe clips, you will want to practice this quite a bit. Turn your bike upside down, move the pedals and shift gears. The pedals can also use a regular application of lubricant.
The purchase of your helmet should be at least as important as buying your bike. About 90 percent of the people riding can reduce head trauma just by wearing a helmet. Cost shouldn't be a factor as a good helmet can be acquired for around $25-$45.

on SPECIALIZED, road and mountain bike pedals.?
For mountain, I'm riding a 2006 Specialized Rockhopper Pro. I've been riding the stock platform pedals since i bought it in 07, and really like being able to put my feet down and ride lose. Any suggestions for a SPD combination pedal? (so i can pedal more efficiently and have the platform option as well)
Also, i just got an 09 Specialized Langster, which came with a decent pair of toe-clip pedals (baskets). I'm looking at Shimano a530's to replace these. Any thoughts on these?
Bicycling.com has always recommended the Forte Campus pedals, which are made by Performance Bike. I have the Shimano PD-M324 and like them a lot. I actually just switched over to the Shimano A-520 (similar to the 530's you asked about), and have to say that I like the PD's better. I find the second ones much harder to clip into, and one of them is really hard to release even on the loosest setting. I also like the ability to not be clipped in on one foot if you know you are going to have to stop a lot, or may have to stop suddenly and need to get a foot down fast, so I think the two-sided pedals are better when riding in conditions that necessitate not being clipped in all the time.
